  Makeupthepastryandline6-8individualtarttins.Bakeblind.whiskeggsinabowlwiththeLondonGoldandcreamcheese.Seasonandstrain.Addchoppedherbsandbalsamicvinegarifdesired.
  Arrangefillingsinpre-bakedfancauses,pouroveralittleofthesauce,sprinklewithParmesan.
  Bakeinalowtomoderateoven(150℃/gasmark4)untilthecustardisset.Severwithsaladleaves,freshherbsandfriedbalsamiconionslices.
  Fortheroastedonion,peelandcutthroughalmosttothebase.fanout,brushwithoil,roastuntilgoldenandtender.UseasafillingforthetartsortossedOitabalsamicvinegarinthesalad.
